Low FODMAP Dark Chocolate Mousse Cake

Looking for an indulgent afternoon tea treat, birthday cake or dessert? Look no further than this low FODMAP dark chocolate mousse cake. Made with only a few simple ingredients, including butter, eggs and gluten-free flour, it’s an achievable sweet treat that will quickly become a go-to recipe.
Ingredients
- 500g dark chocolate, chopped
- 2 tbsp maple syrup
- 125g unsalted butter
- 4 eggs
- 1 tsp vanilla essence
- 1 tsp coconut sugar
- 1 tsp gluten-free flour, sifted
- raspberries to serve
Method
- Preheat the oven to 220°C / 200°C fan-forced. Grease and line the base of a 20cm round spring-form cake pan with baking paper.
- In a medium heat-proof bowl, combine the chocolate, maple syrup and butter. Place over a saucepan of simmering water, stirring occasionally, until melted. Take off heat to let cool for 10 minutes.
- In a large bowl, beat eggs, vanilla and coconut sugar with an electric mixer on high for 8-10 minutes until thick and pale (important to beat for this time length).
- Fold in the sifted flour, then the cooled chocolate mixture until combined.
- Pour into the lined cake pan and bake for 12 minutes (centre will not be set).
- Remove from the oven and run a knife around the edge of the cake. Remove the collar from the spring form pan and place the cake in the fridge for 1 hour (this sets the middle of the cake more). Serve with fresh raspberries and enjoy!
