- Preheat the oven to 180°C/355°F.
- Boil water in a medium saucepan and cook the pasta according to the packet instructions. Drain and set aside.
- Place the chopped mushrooms in a large casserole dish and drizzle with garlic oil. Stir to coat the mushrooms. Cook in the oven for 10 minutes.
- Once the mushrooms are cooked, add the ricotta cheese and seasoning. Mix well. Add the cooked pasta and baby spinach. Mix until all ingredients are combined.
- Top with mozzarella cheese and bake for 10-15 minutes or until golden brown.
