Method
- Heat 1 tbsp oil on a grill pan and cook the corn on the grill, turning occasionally, for 6-8 minutes until cooked. Remove and cut off the kernels.
- Place the capsicums and remaining oil in the grill pan and cook for 5 minutes before turning and cooking for another 5 minutes.
- In a small bowl, whisk together the yoghurt, harissa, lime juice, and season with salt and pepper.
- In a large bowl, combine the corn, capsicum, butter beans, coriander, cherry tomatoes, and rocket. Drizzle with the dressing.
