- Cook freekeh per packet instructions.
- Meanwhile, heat a frypan on medium heat and lightly toast seeds until golden brown.
- In a jar, combine the oil, vinegar, manuka honey and a pinch of salt and a crack of pepper to make the dressing.
- Pour 1/3 of the dressing onto the chopped kale and massage for 1 minute until well coated and tender.
- In a large salad bowl, combine the kale, cooked freekeh, seeds, feta and pomegranate. Drizzle remaining dressing on top to serve.
Notes:
To make this recipe dairy-free, swap the feta for avocado.
To make this recipe vegan, swap the feta for avocado and use maple syrup instead of honey.
To make this recipe gluten-free, swap the freekeh for quinoa or brown rice. You can easily add a tin of lentils to this recipe to up the fibre and heartiness. Massaging kale makes it softer and tastier. Simply scrunch the kale pieces between your fingers.
