When it comes to impressive, but oh so easy desserts, this low FODMAP lemon and olive oil cake takes the well… cake! With just a few ingredients and quick prep time, you’ll be serving up this low FODMAP dessert in next to no time.

Ingredients
- 2 cups of low FODMAP flour / gluten-free flour, sifted
- 1 medium-sized lemon, zest and juice
- 1 cup lemon-infused extra virgin olive oil(you can use extra virgin olive oil if you don’t have the lemon-infused version)
- 1 egg
- 1 cup coconut sugar
- Pinch of Salt
Method
- Preheat oven to 180°C/160°C fan-forced. Line a 20cm cake tin with baking paper.
- In a large mixing bowl, combine the flour and salt. Create a well in the centre of the mixture.
- In a separate bowl, combine the lemon zest and juice, olive oil, egg and coconut sugar. Add the wet mixture to the dry mixture and combine. It should have a curd-like texture. Pour the cake mixture into the prepared tin.
- Bake for 25 minutes or until a skewer inserted comes out clean. Make sure to regularly check it’s not burning!
