Imagine golden-brown muffins, each hiding a savoury surprise inside. Packed with gooey melted cheese, sundried tomatoes and spinach - it’s like a pizza met a muffin and created the ultimate portable pizza experience.

Ingredients
- 3 cups self-raising flour
- 1 tsp baking powder
- 1½ cups grated cheddar cheese
- 150g sundried tomato strips
- 1 cup baby spinach, chopped
- 1 cup extra virgin olive oil
- 2 tbsp tomato paste
- 2 free-range eggs
- 1 cup milk
- 1 tsp salt
Method
- Preheat oven to 180°C (355°F).
- In a large mixing bowl, combine flour, baking powder, and 1 cup of cheese.
- Make a well in the bowl and add eggs, milk, sundried tomatoes, tomato paste, spinach leaves, 1 cup of oil, and salt. Mix the wet ingredients thoroughly, then combine with the dry ingredients to form a dough-like texture.
- Grease a muffin tray and spoon the mixture into the muffin tins. Top with the remaining cheese. Bake for 30 minutes or until cooked through.
