Pile on the goodness with a rainbow of veggies, savoury black beans, and fresh pineapple, where every bite is a symphony of sweet, savoury and juicy. Drizzle some lime juice and sprinkle with coriander for the ultimate party on a plate.

- Preheat oven to 200°C (395°F). Microwave sweet potato for 5 minutes. Then spread out over a tray and bake for 15 minutes or until crispy.
- Heat oil in a pan, sauté onion for 3 minutes, then add black beans and tomatoes. Stir through taco seasoning and cook for a few minutes until fragrant.
- In a bowl, combine coriander, pineapple, and avocado.
- Top the sweet potatoes with the black bean mixture, then top with salsa, lime, and shredded cabbage.
