Description:

Lotus Agar Agar powder is a great vegetarian substitute for gelatine. It’s obtained from algae and can be used to make jams, jellies, custards, puddings, ice cream and other desserts, to thicken soups, dressings and sauces, and as an egg white substitute. Usage Directions:

It can be used as a 1:1 replacement for gelatine powder in a recipe. Just like gelatine, it needs to be 'bloomed' in the cold liquid before heating. For every cup of liquid you want to set use 1 teaspoon agar. Mix with the cool or cold liquid, bring to a simmer while whisking then pour into an ungreased mould. Refrigerate or leave on the bench until set. Use less agar (or more liquid) for a softer set or if you will be serving it fridge cold. If setting acidic ingredients like cranberry, lemon or pineapple increase the agar agar slightly. Egg white substitute per egg: mix 1 tablespoon agar agar in 1 tablespoon of water. Use an immersion blender or whisk to vigorously whip the mixture, then put it in the fridge to chill. Once cool whip it a second time.

Storage:

Store below 25°C and away from direct sunlight.
