Lotus Organic Potato Starch is made from the dried starch of potatoes.  
  
What is potato starch?  
Potato starch is a slippery, pure white and very fine flour useful in baking or as a thickener. Potato starch can take higher temperatures than cornstarch, making it an excellent thickener for potato starch recipes like sauces, soups and stews.
