Lotus Organic Tapioca Flour is a fine, gluten-free flour made from milling cassava root. It can be used in tapioca flour recipes as a flour substitute, thickener for soups and gravies, or to lighten baked goods like tapioca flour biscuits and cakes.  
  
What is Tapioca Flour?  
Tapioca flour is a starch extracted from the storage roots of the cassava plant. It’s flavourless, gluten-free and mixes quickly, unlike all-purpose flour which contains gluten and needs to cook a little longer to get rid of its powdery texture.
