Ingredients
- 1/2 cup cauliflower rice (heated) mixed with 1/4 cup cooked brown basmati rice
- Protein options: 1 × 95-gram can of tuna (BPA free) in olive oil, drained well or 80 grams of cooked and shredded chicken (skin off)
- 1 cup spinach leaves
- 1 small can of beans (BPA free): 125 grams of edamame beans or 4 bean mix (drained well and rinsed)
- 1/2 tbsp extra virgin olive oil
- 2 tsp grated Parmesan cheese
- Sprinkle of crushed walnuts to serve
Method
- Wash and dry all your veggies, then prepare as required.
- Simply mix and serve!
- Top with crushed walnuts.
